About the Role We are seeking a detail-oriented and motivated Quality and Sampling Technician to join our abattoir team. In this hands-on role, you will
assess carcasses and meat products, collect samples using drilling equipment, and perform Clinical Lean testing to ensure compliance with regulatory standards, customer specifications, and AUS-MEAT grading requirements.
You will play a critical role in maintaining product quality, accuracy of yields, and supporting production efficiency. Training will be provided on all procedures and equipment, so if you are safety-conscious, accurate, and committed to quality, this is the perfect opportunity.
Key Responsibilities - Inspect carcasses for lean meat content, fat distribution, marbling, and overall composition.
- Use drilling equipment to collect accurate meat samples for CL (Chemical Lean) testing.
- Conduct Clinical Lean (CL) testing and use drilling equipment to collect accurate meat samples.
- Mix, weigh, and prepare meat samples for microwave testing in line with standard procedures.
- Record carcass weights, grades, and yield data, maintaining accurate documentation.
- Ensure compliance with AUS-MEAT, food safety, and internal QA standards.
- Maintain and sterilise all equipment, keeping the workstation clean and hygienic.
- Collaborate with QA and production teams to report non-conformances and support corrective actions.
- Follow all health, safety, and hygiene protocols, including Safe Knife Handling Policy.
Skills & Attributes - Strong understanding of carcass grading, meat composition, and lean measurement methods.
- Excellent attention to detail and accuracy in data collection.
- Knowledge of food safety and hygiene practices.
- Ability to work effectively in a physically demanding, cold, and wet environment.
- Strong communication skills and ability to work in a team environment.
Qualifications & Experience - Certificate or training in meat processing, meat science, or meat inspection preferred.
- Previous experience in abattoir operations, carcass grading, or quality inspection advantageous.
- Familiarity with AUS-MEAT or similar industry grading and yield standards preferred.
- Understanding of Clinical Lean (CL) testing procedures and QA compliance.
